Ever have to take a job over after an employee quit?

Was there ever a time where you had to take over a job because someone else quit? I've never had to, but I imagine it happens often in the work force. Has this ever happened to you? How long did you work the job before you hired someone else in to take over?

This has happened to me multiple times. When I was running a restaurant I had to take the job of waiter when the waiter that was working for us went on a long leave. I worked as a waiter until we were able to hire a new waiter.
